Summer is in full swing, and we love it! We searched high and low for summer-friendly food. We found 4 great recipes to keep you hydrated, fueled up, and not tied up in the kitchen too long. Our assortment includes soups, seafood, veggies, and quick bites. Let us know what you think in the comments:



1. Zucchini Fritters – Before you say yuck and scroll away, give it a chance. It’s a great way to satisfy our need for something crispy and warm. It’s a veggie, so that’s a plus, you can make them in under and hour, and they’re absolutely yummy.

Here’s what you’ll need:

1½ pounds zucchini (about 3 medium), grated

½ teaspoon kosher salt plus more for seasoning

1 large egg

¼ cup all-purpose flour

3 tablespoons finely chopped fresh chives

1 tablespoon cornstarch

Freshly ground black pepper

⅓ cup vegetable oil


Here’s what you do:

Place zucchini in a colander set in the sink and toss with ½ teaspoon salt. Let stand 10 minutes, then wring zucchini dry in a clean kitchen towel. Place zucchini in a large bowl and gently mix in egg, flour, chives, and cornstarch, season with salt and pepper.


Heat oil in a large skillet over medium heat. Working in 2 batches, drop ¼-cupfuls zucchini mixture into skillet, flattening slightly; cook until golden and crisp, about 3 minutes per side. Transfer fritters to a paper towel–lined plate; season with salt.

2. Greek Lemon Chicken Soup (5 Easy Steps!)


  1. Simply sauté the onion and minced garlic for 3-4 minutes to soften.

  2. Add the chicken broth, raw chicken breasts, lemon zest, and crushed red pepper to the pot. Raise the heat to high, cover, and bring to a boil. Once boiling, reduce the heat to medium, then simmer for 5 minutes.

  3. Stir in the couscous, salt, and black pepper to taste. Simmer another 5 minutes. Then turn the heat off.

  4. Remove the two chicken breasts from the pot and shred the chicken. Then place it back in the pot. Stir in the crumbled feta cheese and chopped chive.

  5. Taste then salt and pepper as needed. Serve warm.

3. Cajun Shrimp with Avocado Spread (Makes 20-22 shrimp bites)




Cajun Shrimp Ingredients

  • 1lb large shrimp, peeled and de-veined

  • 2 garlic cloves, finely minced

  • 1Tbsp cilantro, finely chopped, plus more to garnish

  • 1tsp paprika

  • 1/2tsp cayenne pepper

  • 1/2tsp sea salt

  • 1/4tsp black pepper

  • 2Tbsp olive oil, divided

Avocado Spread Ingredients

  • 1avocado

  • 1/4 tsp salt

  • 1Tbsp lime juice, plus more to squeeze over finished appetizers

  • 1English Cucumber, sliced into 22 rings

Shrimp Instructions:

  1. Place shrimp in a large mixing bowl and pat dry with paper towels. Add minced garlic, 1 Tbsp cilantro, 1 tsp paprika, 1/2 tsp cayenne pepper, 1/2 tsp salt, 1/4 tsp black pepper and 1 Tbsp olive oil. Stir well to combine.

  2. Heat a large heavy pan over medium/high heat with 1 Tbsp olive oil. Once oil is hot, add shrimp in a single layer and sauté 2 min per side or until cooked through.

How to make the spread and assemble:

  • In a small bowl, mash together 1 avocado, 1/4 tsp salt and 1 Tbsp lime juice until creamy. Divide the avocado mix over 20-22 cucumber slices.

  • Squeeze fresh lime juice over the shrimp avocado bites and garnish with more finely chopped cilantro. If not serving right away, cover and refrigerate up to 4 hours before serving.

4. Lemon Drink


Ingredients:

  • Lemon juice

  • 1tsp black salt

  • 3-5 tbsp sugar

  • Ice (as much as you like


Directions:

Squeeze a lemon and mix it with sugar. Add black salt. Mix it up. Add crushed ice and water. Use slices of lemon for serving.
